Thisway of preparing your Kingfish combines the taste and freshness from having it raw and the texture from cooking it! Easily prepared!
Cut the kingfish fillet in two or three full length pieces so that you have two or three nice cube-like long fillets. Heat a pan with a drizzle of oil and fry the fillets quickly until you have 2 mm fried surface all around. Then put it in a marinade of 1/3 Water + 1/3 Soy sauce + 1/3 Mirin. Let marinade for minimum an hour, preferable a longer, over night or so.
